Southern Cordon Bleu

8 boneless chicken thighs

8 slices deli sliced thin black forest ham

8 slices smoked provolone cheese

½ lb thin sliced bacon

 

Lay chicken thighs skin side down.  Place sliced ham and sliced cheese on thigh.  Roll thigh up using skin to close edges.  Wrap sliced bacon around breast and secure with toothpick if needed. 

 

Place in lightly oiled Dutch Oven and bake at 350, or hand over medium high heat with top coals for approximately 40-45 minutes or until juices from chicken runs clear and bacon is crisped and breast is lightly browned.
