Shrimp and Wild Rice

Shrimp and Wild Rice

 

1 onion diced

4 stalks celery, diced

1 green bell pepper, diced

4 cloves garlic, minced

1 stick butter

¼ cup roasted red peppers, diced

2 boxes Uncle Ben’s Chicken and Wild Rice

3 cups chicken stock

seasoning packets

1 can diced tomatoes

1-2 lb large shrimp peeled and deveined

 

Melt butter in large Dutch Oven, sauté onions, celery, and green bell pepper until tender.  Add red bell pepper and garlic and sauté for 1-2 minutes until fragrant.  Add rice and sauté 3-5 minutes add stock, seasoning packets and diced tomatoes.  Bring to boil then cover and reduce to low simmer.  Cook until rice is tender add shrimp and cook until shrimp is done.
