Ranch Potato Salad

3 lbs baby potatoes (mixture of red and Yukon gold)

1 cup mayonnaise

1 packet Ranch Salad dressing mix

2 tablespoons milk

½ green bell pepper, diced small

½ red bell pepper, diced small

2 stalks celery, diced small

1 small sweet onion, diced small

¼ cup bacon bits

 

Wash and cut potatoes to same size to ensure even cooking.  Bring pot of salted water to boil, then add potatoes.  Cook potatoes until just tender or until knife easily pierces potatoes.  Drain and set aside to cool.

 

Mix mayonnaise, dressing mix and milk together.  Add diced vegetables and stir to combine.  Toss potatoes in mayonnaise mixture coating potatoes evenly.  Top with bacon bits.
