Fried Potatoes

Fried Potatoes

Dutch Oven:  Large Skillet

 

¼ cup bacon grease

½ pound ground sausage (optional)

4 cups raw potatoes, thinly sliced

1 medium onion, thinly sliced

¼ teaspoon coarse black pepper

1 teaspoon salt

½ teaspoon dried sage

1 teaspoon dried parsley flakes

 

Heat the bacon grease/oil in a skillet over a low to medium fire.  Lightly brown the sausage.  Add the potatoes and onion.  Add half the seasonings and stir.  Make sure the potato slices are separated and not all clumped together.  Cover skillet and allow to cook for about 15 minutes.  Check to make sure the fire is not too hot and that the potatoes are not sticking to pan.

 

Remove the lid and turn the potatoes.  Add the remaining seasonings and mix.  Cover the skillet and cook for another 15 minutes stirring the potatoes a couple of times.  Add additional bacon fat if needed.  Potatoes should be slightly crisp and lightly browned.

 

Remember, not too high a fire or the potatoes will burn.
