Caprese Salad

½ purple onion, diced

6-8 cocktail tomatoes, quartered

½ yellow bell pepper, diced

½ orange bell pepper, diced

1 large cucumber, diced

½ cup creamy Italian dressing

 

Mix all ingredients together and refrigerate for 1-2 hours to allow flavors to marry prior to serving.
