Asparagus with Lemon and Garlic

 

1/3 cup vegetable oil

1 lemon

2 lbs asparagus ends trimmed

4 cloves garlic, thinly sliced

¼ cup green onions, chopped

 

Heat oil in a skillet over medium high heat.  Remove strips of zest from the lemon, using vegetable peeler.  Add zest to oil and heat until zest is sizzling.  Remove zest strips and set aside.

 Place asparagus in even layer in skillet and season with salt and pepper.  Saute until tender, 12-to 15 minutes.  Add zest and sliced garlic to skillet during the last 2 minutes of cooking and toss.

 

Transfer to serving platter and top with chopped green onion.
